Ingredients

Serves 8

| 2 eggs, slightly beaten |
2 cups milk |
| 1 tsp. salt |
4 tsp. baking powder |
| 4 Tbsp. vegetable oil |
1 Tbsp. granulated sugar |
| 1 3/4 cups sifted cake flour |
1/4 cup toasted chopped pecans |
| 1/4 cup fine cornmeal |
2 Tbsp. oat bran |
| Fresh peach slices |
Butter Pecan ice cream |

Preheat oven to 350 degrees. In a large bowl, combine the eggs, milk, and oil. Add the next six ingredients and whisk until smooth. Stir in the pecans. Ladle the batter on a greased hot griddle. Place pancakes on serving plates and surround with the peach slices.
Use hot syrup. Garnish with toasted coconut.
Serve with bacon.
