Ingredients
Serves 8
2 eggs, slightly beaten  2 cups milk 
1 tsp. salt 4 tsp. baking powder
4 Tbsp. vegetable oil  1 Tbsp. granulated sugar
1 3/4 cups sifted cake flour 1/4 cup toasted chopped pecans
1/4 cup fine cornmeal  2 Tbsp. oat bran 
Fresh peach slices Butter Pecan ice cream
Preheat oven to 350 degrees.  In a large bowl, combine the eggs, milk, and oil.  Add the next six ingredients and whisk until smooth.  Stir in the pecans.  Ladle the batter on a greased hot griddle.  Place pancakes on serving plates and surround with the peach slices.

Use hot syrup.  Garnish with toasted coconut.  
           Serve with bacon.
