Pumpkin Praline Muffins
3 Tbsp. brown sugar
1 Tbsp. dairy sour cream
1/3 cup broken pecans
2 cups all-purpose powder
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/4 tsp. ground nutmeg
1/8 tsp. ground cloves
1 beaten egg
3/4 cup buttermilk
3/4 cup canned pumpkin
2/3 cup packed brown sugar
1/3 cup margarine or butter, melted
Grease (12) 2 1/2 in. muffin cups. In a small bowl stir together 3 Tbsp. brown sugar and sour cream. Stir in pecans. Set aside in a medium bowl. Stir together flour, baking powder, cinnamon, baking soda, nutmeg, and cloves. Make a well in the center of dry mixture. In another bowl stir egg, buttermilk pumpkin, 2/3 cup brown sugar, and melted butter. Add the pumpkin mixture all at once to the dry mixture. Fill each muffin cup 3/4 full. Drop 1 tsp. of pecan mixture on top of each muffin.
Bake at 400 degrees about 20 minutes.
Serve Warm. |
Feather Light Pancakes
2 eggs, slightly beaten
1 tsp. salt
4 Tbsp. vegetable oil
1 3/4 cups sifted cake flour
1/4 cup fine cornmeal
Fresh peach slices
2 cups milk
4 tsp. baking powder
1 Tbsp. granulated sugar
1/4 cup toasted chopped pecans
2 Tbsp. oat bran
Butter Pecan ice cream
Preheat oven to 350 degrees. In a large bowl, combine the eggs, milk, and oil. Add the next six ingredients and whisk until smooth. Stir in the pecans. Ladle the batter on a greased hot griddle. Place pancakes on serving plates and surround with the peach slices.
Use hot syrup. Garnish with toasted coconut.
Serve with bacon. |
Peaches and Cream Pie
2/3 cup sugar
1/2 tsp. cinnamon
1/4 tsp. salt
4 tbsp. flour
1c whipping cream
Mix together all ingredients and pour over fruit. Place in pastry-lined pan: 5-6 peaches, sliced (enough to fill pie crust).
Bake at 400 degrees for 35-45 minutes.
Bake until crust is nicely browned and filling is set. Serve slightly warm.
Also good with blueberries. |
Chantilly Cream
1 1/3 heavy cream
2 Tbsp. Grand Marnier
2 Tbsp. brandy
1 Tbsp. vanilla
1/2 cup sugar
4 Tbsp. sour cream
Using a cold kitchen aid bowl and whisk, beat the cream, vanilla, brandy and Grand Marnier for 1 minute. Add the sour cream and sugar and beat on medium until soft peaks form; about 3 minutes.
Serve with strawberry crepes. |
